Egg-Free, Milk-Free Gingerbread Cookies with Gluten-Free Option

These are a perennial favorite in our house and a tradition every year! It's the only cookie that my kids actually request....erhm, insist on! I have a (bordering on obscene) collection of cookies cutter that I've gathered over the years. Some are antiques from my grandmother and even her grandmother!  Others are fun and whimsical more recent additions.

I love gingerbread and I've used this dough for gingerbread houses as well as cookies. Just roll it a little thicker for "construction grade". Usually, we just decorate with sanding sugar before baking, but sometimes use cookie icing to make "fancy" decorated cookies.  One year, my daughter made special cookies for her marching band trumpet section!
