My food allergic son is now 20 years old and still allergic to All Dairy! I have had this idea of opening a restaurant without the Top 8 food allergies used in all cooking for years! I would love to see it come to fruition, although I cannot do it myself at this stage in life. But we vacationed so many times when my son was young, and all he could eat back then was pasta and green beans. He was allergic to Olives, Olive Oil, All Berries, Cherries, Plums, Apples, Apple Juice, Beef, Carrots, All Dairy, Fish, Shellfish, All Tree Nuts back then! He outgrew all of those except....Diary, Tree Nuts, Fish, Shellfish... in 3rd grade. Last year, age 19, he outgrew Tree Nuts. He has been slowly trying Fish. Dairy is still a problem. We would have loved to see a food chain back in those years that at least excluded the Top 8! 

love this!  This is right along the lines of a book I wrote for families with food allergies.  It focuses on modifiable recipes for all top 8 food allergens. It would be a dream to have restaurants do the same!!
