Wheat free crust is tricky. Its hard to roll out. I use my usual recipe - 1 cup flour to 1/3 cup shortening. I add my water by feel. I use the brown rice flour mix in the recipe collection. The key I found was to chill the dough at least an hour. Without chilling, I couldn't roll it out. Its still delicate but I roll between parchment. That way I can move it around.
I think we've learned no one study will ever explain everything....My DS had antibiotics the first two weeks of life, his father had a milk allergy as an infant, and much later I found out his uncle had soy and wheat, and EVEN LATER (like last year) I found out my ex-father in law also had a milk allergy as a baby and was failure to thrive.I think even if I lived on a farm and let him roll in the mud with the pigs, that combo would have been hard to overcome!

Thanks! Birthday kid is way into Shakespeare - so he wanted his cake to be a replica of the most famous theater associated with Shakespeare. This was zebra (chocolate & regular) "wacky cake", then I cut a circle out of the middle. The "wood" for the half-timber look and rooftop was chocolate roll-out cookies cut into "boards".
