Dr. Stukus - Thank you for sharing this information. I agree with much of what you had to say and wanted to know if you would ever recommend the "Gold Standard" for accommodations in school? I have two children with close to 40 ER visits between them for allergic reactions. One has had RAST scores over 100 to Peanuts since infancy - he is 12. Wow, that's great information thank you. I'm just wondering what you suggest since we fall into the category of my son being tested for allergies at a young age due to his eczema; however, he never tried any of the food before. Now we have an Epi pen for him as he was diagnosed with anaphylactic allergies. Thank you!

Our allergist says that they have never had an egg-allergic child react iwith ana to the flu vaccine. They give it in the office to be on the safe side (they have all the rescue meds in the unlikely event there should be a reaction). My son has had it the past three years without any issues whatsoever. My son is ana to trace amounts of egg--he has reacted to cross-contamination. Hi kally, My son has a very severe milk allergy and we eat at Chipotle 1-2 times per week. I can totally understand your apprehension. Here are some tips: One person handles your food. They will change their gloves first - sometimes you have to remind them but it's coorporate policy AFAIK. I always ask them to hold my son's tray - do not slide it on the counter. We only get rice, beans, and meat from the bar. Any salsa, lettuce or guac comes from the fridge under the bar or the back.

We have found our local Applebee' s to be very supportive of our granddaughter's allergies (top 8 plus tomatoes, beans, peas, corn, beef). They cook her a chicken breast in a clean pan w/o oils, steam her fresh veggies from unused previously unopened packages of each veggie, lettuce w/o dressing (sometimes she has her chicken in the salad and we bring some dressing she can have), etc. And, they come check on her frequently to make sure there are no problems. When it is time to retest her allergies, her parents pick 6-8 possible allergens to test at that time. They are testing through blood tests once or twice a year. What gets tested depends on what she has been eating and what symptoms she has been having. I did finally make this! But I only made the cauliflower risotto part as a side dish with grilled sausage. Bc I didn't want to drag out my food processor, I used the large side of a box grater to grate down the cauliflower. Easy peasy! Great post. I have a question about baking larger sheet cakes. Do you use a metal core (I can't remember if that is the "real" name for that, or not) when you bake them? I usually make a half sheet for birtday parties and find it is difficult to get the center done without over cooking the side.

I do have a heating core, but I've found that allergen friendly cakes don't always bake well in larger sizes. This is especially true of egg free cakes since they lack key structure. If you can get it baked through, the chance of cracking or crumbling while handling it is pretty high. I've found that Wacky Cake doesn't do well in anything bigger than 9x13 - it takes so long for the center to heat up that the single acting leavening just fizzles out. Gluten/wheat free cakes are very difficult...
