Hi. The document is quite big and so keeps freezing my screen when about 1/3 of it has downloaded. Is there a version that is text-only, or similar? It looks like a great idea (and I agree with the post-er above, that it's appropriate for ALL children). Thanks!

Could gelatin replace xanthan gum? I'd be making other substitutions and DS has never had a "real "cookie. , so if it was a little off from the original consistency, it's OK.

I would give it a try...or I might even omit it. I made muffins with a similar flour combo the other night and it wasn't until later that I realized I didn't put in the xanthan. But those did have more applesauce which has pectin. What other changes are you making? I think that might be a factor too. I just find gelatin rather gummy.

This was a great article! Very clear and concise descriptions and great presentation format! This emphasis on the different types I've never seen stressed before. It would be very helpful to further understanding by also knowing what is the percentage of IgE mediated vs. non-IgE mediated food allergies. I hope that additional information can be posted in a comment or follow-up blog entry. Thank you!

Thank you, thank you, thank you! I used this handout at a meeting with my son's teacher this morning after a near miss due to confusion about IgE vs. non-IgE allergies. This put things simply for her, and now I feel confident that she understands and can keep my son safe at school.

I understand this handout was created to help people understand food allergies, but including statements like, "Children may be asked to not bring certain foods to school so other children with food allergies can participate in school activities with their classmates and not feel different or left out." makes it more difficult for parents of children with life threatening food allergies. I have a child with multiple food allergies, with dairy being the most severe. He also has had asthma induced with "contact sensitive" reactions from accidentally touching an allergen on a surface and then touching a membrane (eyes, nose, lips). Many people do not realize the severity of "cross-contamination" and or "contact sensitive" individuals with food allergies.
