This is the bread my son depends on...I've been making it for over 2 years now. We use applesauce to replace the egg, so I guess we could call ours applesauce bread!? Going to try it with sweet potatoes. Sounds yummy!
I tried this bread and my family loved it. My older son who doesn't have any food allergies ate 2 slices with butter and wanted more. My husband didn't think it tasted like gluten free bread at all! Thanks for this recipe. I was using egg replacer before and it didn't have much flavor. I like the extra vitamins that we are getting by using sweet potato too. ��

I have been asked to make a cake for a 2 yr old who has severe dairy, egg and soy alergy, this is the first recipe I have come across, is it for defiantly free from all three? if so what flour do you use, and is the vinegar normal brown or is it white?
We make "wacky cake" all the time for our kids! Yes - the recipe is egg, dairy & soy-free! We use "unbleached all purpose" flour, and whatever vinegar works for your allergy set. I was very skeptical of Mexican and Italian restaurants in the beginning. The idea that there was so much cheese in the kitchen made me very nervous. However, I was surprised to learn that many Mexican restaurants don't use much in the way of milk or butter... just lots of cheese. For DS we are almost always able to get him white rice and beans (black or refried - hold the cheese). Occasionally we get him meat, too, but honestly he loves rice and beans so much he prefers them over the meat.

KFA ADMIN: There is one statement in the article that is incorrect that we would like to clarify. In the U.S., food manufacturers are not required to state if food was processed in the same facility as peanuts (or any other major food allergen). FDA regulated foods are required to list top 8 allergens in the ingredients list if the food contains one of those allergens (peanut, tree nut, milk, egg, soy, wheat, fish, shellfish).

I do have a heating core, but I've found that allergen friendly cakes don't always bake well in larger sizes. This is especially true of egg free cakes since they lack key structure. If you can get it baked through, the chance of cracking or crumbling while handling it is pretty high. I've found that Wacky Cake doesn't do well in anything bigger than 9x13 - it takes so long for the center to heat up that the single acting leavening just fizzles out. Gluten/wheat free cakes are very difficult...
We found shredded Diaya in chedder and LOVE it! It's not as good if it's not melted, but it tasted great on pizza and macaroni and cheese! I teared up when my three year old had his first taste of macaroni and "cheese". It melts great.
We have used the shredded cheddar and mozarella varieties in a number of recipes, and we love it. Melts great, smells like dairy cheeses, the melted texture is similar to milk-based cheeses, The Jalapeno variety was way too spicy for my son, age 11. Also keeps unopened for months, for weeks opened, and can be frozen. Only drawback is no calium or protein, really. Looking forward to trying the wedges...I wonder how the costs will compare?
We recently found the "cheddar" and "jack" daiya wedges at our local Whole Foods and got some for our dairy-allergic child to try. He LOVED them and was super excited to be able to have "cheese".
