I am new to this food allergy thing. My son also has EoE and has now been put on the six food elimination diet. i love to bake. to have purchased buckwheat flour, quinoa flour and tapioca flour. I want to make a flour blend that is also nutritious. I'd like to make his bread as well as muffins pancakes, and anything else a 2 year old might like. I'm not sure of the nutritionsl content of the king Arthur flour blend that you've recommended. I will definitely use that when making cakes etc,...

If coconut is safe, there is coconut aminos. Otherwise, I've had good success using umeboshi vinegar. It doesn't have the same depth of flavor (or color - it's purple which can be an odd color in some things), but give that salty "bite" to things. Another options is balsamic vinegar plus salt. That's a little sweeter though. If you can do fish, nuc mam (Vietnamese fish sauce) is another option.

The software company that we use to host our webinars experienced some issues with the audio during this class; additionally, poor weather was affecting audio from one of our guest speakers. Just an FYI, the cake mixes have xantham gum which is typically derived from corn. My son has a corn allergy. I emailed the company to ask what their xantham gum is derived from since the claim to be corn free and I have not gotten a response.

Hi Tiffani - it's hard to find gluten-free products without xanthan gum. There tends to be a lot of controversy over the gums added to gluten-free foods. Xanthan gum is not technically derived from corn. It's extracted from a microbe that can be grown on a refined corn sugar as a substrate. The end product is highly refined and "shouldn't" have any intact corn proteins remaining. Everyone is different and there are some people who do react to xanthan gum. Kathy, thank you SO much for that information! I am new to this so I did not know those details I had just been told to avoid gum in general because it was derived from corn! That actually makes me feel better about trying some products with xantham gum. I am looking for a box cake mix for my son’s first birthday and having the hardest time. Current allergies are corn, milk, egg, wheat, oat, soy, treenuts, peanut, chicken, and banana. Some of this may be false positives, but we are avoiding...
