Home cured "grey" corned beef brisket cooked with spices and root veggies (onion, garlic, parsnips, carrots, and celery root) along w/ cabbage and new potatoes. Curing corned beef was easier than I thought and the flavor was amazing! It's "grey" because no nitrates were in the cure - that's what keeps cured meats pink/red.
