This was very yummy. I made seasoned croutons with bread ends I'd been tossing in the freezer. I marinated the chopped tomatoes and cukes with red wine vinegar and olive oil. I also tossed in some minced parsley. Right before serving, I added the bread so it would not get mushy. The 10 minutes it sat while I rested the meat was just about perfect!
