That particular cake was "Kevin's Strawberry Layer Cake" from Linda Coss' cookbook "What's to Eat?: The Milk-Free, Egg-Free, Nut-Free Food Allergy Cookbook". I've also done similar layer cakes using this egg & dairy-free "wacky cake" recipe.
The frosting was based on this one but I used half Earth Balance buttery sticks and half Spectrum shortening. To get that really really bright color I used "gel" food coloring.
I pretty much followed the instructions in the link above with a tutorial for making a "doll" cake ... but I baked the "top" layer in a small pyrex bowl so it was already curved.
It's actually a LOT easier to do than it looks, and has a big "wow" factor.
Oh ... and my then 4 year old helped with the decorating ...
It's more of a technique than a recipe. I've made a few from the wacky cake recipe that is listed as a free featured recipe. I'm not sure the tutorial is still available but here's the idea.
Bake 3 or 4 layers of cake. Each batch of wacky cake is one layer. I did two 9" and 2 in an 8" but if they're all the same it's okay too. Take a round cookie cutter that is just a bit larger than Barbie. Cut a hole in the center of each layer and stack and frost between them. So now you have a very tall cylinder. Take a long knife, like a bread knife and carve the curve of the skirt. Then frost the whole thing. I do all of the frosting in plain white and let it sit overnight. Then I go and frost the next day with the color the birthday girl demands, I mean, shrieks for, I mean, requests.
