    If you are corn-free then you should NOT eat xanthan Gum. Out of all the patients I know with reactions or allergies to corn they all react to xanthan. A better choice for the corn-allergy population is guar gum. Also, for the very sensitive all of the ingredients needed to have been sourced carefully to avoid corn cross contamination during harvest and processing.     Thanks for sharing that. I've found it to be very individualized on corn issue. Neither of my kids ever had issues w/ xanthan. It's important to know how to I know sometimes xanthan cause issues not related to corn for people. Not all xanthan is cultured on corn. I know Bob's Red Mill brand is on wheat. Some have issues w/ guar gum as well since it's a legume and can cause GI issues in some.

    There are definitely different sensitivity levels to corn products. I know we cannot use Bob's of any type because when we contacted them they even said there is a risk of cross contamination to corn because of their procedures. Guar gum definitely is an issue for some with legume but isnt derived from corn. There does seem to be a part of the population that both reacts to wheat and corn, but I know on the various corn allergy support groups it is strong recommended to avoid all xanthan gum...
