The zest is the yellow skin of the lemon. You can use a small grater to get it off the lemon. Try not to get much of the white stuff that's underneath the skin, as this is bitter.

...or, you can make your own powdered sugar in a "dry" Vitamix blender container by grinding up regular sugar...but I prefer to buy it at Trader Joe's since I feel as if I make almost everything else mysef! Trader Joe's version has tapicoa starch instead of corn starch.
Wholesome Sweeteners powdered sugar is also corn free - it uses tapioca starch. Trader Joe's is great, but it's only available "seasonally" during the winter/holiday baking season. They may still have some left, so stock up if you find it!
My Trader Joe's stocks it all year... I wonder if you could get it more often by talking to the store manager? They are always very nice. I'll bet Trader Joe's "brand" is really repackaged Wholesome Sweeteners!
Thank you for sharing these tips and recipes! When I have to make one in a rush--I put a box of Enjoy Life soft baked cookies (gluten, dairy, egg, nut free) into a bag and smash them up...then I just press them into the pie plate! The snickerdoodles are great as a base for pumpkin pie!
It's too late for Turkey Day, but for next month, what I found when I am making dough is to make it days ahead of time and let it sit in the fridge for a few days. Somehow it came out better that way.
My gf dough has to sit in fridge at least a few hours. I just try to make it the night before. If I have all my sides done Wed, I can bake my pies Thurs. No one is coming for dinner, so I don't have to "entertain".
Very true! We just edited the recipe to make a note that this recipe contains wheat and walnuts. You can skip the walnuts and use extra raisins to make the recipe nut-free.

Hi Dawneth - There are a few brands of dairy (and some are also soy) free chocolate chips. As Jen mentioned, there is Enjoy Life Foods as an option. Their chocolate chips are completely dairy free as well as soy free. There is also Divvies brand which has a line of dairy free chocolates including chocolate chips. Another option is Pascha which carries several different types of dark and semi-sweet chips (and bars).

This looks great. But my son is also allergic to raw fruits so I will boil the apples too. That's for any one else who has raw fruit allergies. This is a great idea for a new breakfast. Thanks so much for sharing it. My son was diagnosed at 8 months old with severe food allergies in 1996. (Wheat,eggs all tree nuts and legumes) It's so much easier now.. Haha!--I'll probably offer the same thing when the time comes for my DS to head off to college. Wishing your DS a great (and safe) first year at college!! That's great to hear that they offer GF foods now--did they sound like they were confident that they could handle the other allergies?
The tree nuts and legumes will be on labels andso would eggs but he now has out grown the egg allergy and that has made cooking easier.... I am hoping it is all well controlled... He is very carful and if something looks or sounds like it could be contaminated he will avoid it... And I am sending him with some power bars he can eat if the meals are not working. And I will be sending care packages too.
