I just finished making this. The recipe does not say how quickly (or not) to add the cubes of oil, so I had to research a traditional recipe to verify that it's added slowly. I used butter since that's what I have on hand. The first few cubes looked good, then it started looking separated and curdled. It wasn't until the very end that it all finally came together. Hi Tiffani - it's hard to find gluten-free products without xanthan gum. There tends to be a lot of controversy over the gums added to gluten-free foods. Xanthan gum is not technically derived from corn. It's extracted from a microbe that can be grown on a refined corn sugar as a substrate. Hi, Joyce, the trainer in an Epi pack is usually a "look alike" that doesn't have a needle. It can be reset to be used over and over again. It's basically a way to teach people which end is up, as with a real Epi, it can be confusing and you want the meds to go in your kid and not in a teacher or staff person's thumb.
That handout is great - thank you!! The only thing I didn't like about it was the "clean" theory as my son's teacher is constantly telling me that this is the reason he has food allergies. annoys me to no end! I would have liked the article not to include any theories but besides that, I love it and plan to use it.
