I found a box of the pizza crust on clearance at Walmart. How did you make these? Did you follow the regular pizza crust instructions then wrap the dough around little smokies? My son has never had pigs in a blanket, so these would be a fun treat.
Leslie - that's how I've made them using homemade biscuit dough. I haven't used their pizza crust mix, but I might hold back a little of the water to see how loose the dough is.
Hand mixing..., anthing but blending, is a def no-no. Blending creates a smooth luxurious thick yolk. On the french toast try just dipping day old sour dough bread into Vegg mixture with no milk for maximal eggy taste. I'm suprised you did't think it tasted like french toast since it's almost unanimously judged to be 'just like' french toast.

Wheat free crust is tricky. Its hard to roll out. I use my usual recipe - 1 cup flour to 1/3 cup shortening. I add my water by feel. I use the brown rice flour mix in the recipe collection. The key I found was to chill the dough at least an hour. Without chilling, I couldn't roll it out. Its still delicate but I roll between parchment. That way I can move it around.
It's too late for Turkey Day, but for next month, what I found when I am making dough is to make it days ahead of time and let it sit in the fridge for a few days. Somehow it came out better that way.
My gf dough has to sit in fridge at least a few hours. I just try to make it the night before. If I have all my sides done Wed, I can bake my pies Thurs. No one is coming for dinner, so I don't have to "entertain".
Very true! We just edited the recipe to make a note that this recipe contains wheat and walnuts. You can skip the walnuts and use extra raisins to make the recipe nut-free.

Hi Dawneth - There are a few brands of dairy (and some are also soy) free chocolate chips. As Jen mentioned, there is Enjoy Life Foods as an option. Their chocolate chips are completely dairy free as well as soy free. There is also Divvies brand which has a line of dairy free chocolates including chocolate chips. Another option is Pascha which carries several different types of dark and semi-sweet chips (and bars).

I used a dough recipe that I'd used before to make French baguettes. I rolled it thin and used large cookie cutters to make the shapes. I par-baked those early in the day. Then the kids just had to top their pizzas before I popped them back in the oven to bake. They were yummy and fun!

To convert "back" to wheat-flour, eliminate the xanthan gum and decrease the total flour to swap for the gluten-free flours. In this recipe, that means using about 2 cups.
UPDATE: The above conversion works for most gluten-free -changing back to wheat, especially cakes. But this recipe's original started out using 2 1/4 cups (wheat) bread flour (which has more gluten content than All Purpose flour).
