Yes, they are green! I first found them last year at a farm stand where I learned they can often be found in ethnic markets. I bought these at a European style open air market in town. They are in little fuzzy pods that have 1 or 2 beans in each. I then blanch them in some boiling water and shock them in ice water to keep the color. These I sauteed w/ some garlic and pepper flakes in olive oil, then tossed w/ the pasta.
I did finally make this! But I only made the cauliflower risotto part as a side dish with grilled sausage. Bc I didn't want to drag out my food processor, I used the large side of a box grater to grate down the cauliflower. Easy peasy! Since it was a side and I wasn't putting a sauce on it, I wanted it "wetter" like a traditional risotto. So I added a cup of homemade chicken stock and let that cook down a little.
