Thanks! I need to make more already!

 

I used one of Joan Nathan's hamentaschen recipes and used the following substitutes:

 

egg - substituted 1-1/2 tablespoons vegetable oil mixed with 1-1/2 tablespoons water and 1 teaspoon baking powder per egg

 

butter - used Earth Balance buttery stick
