I think I posted it when I made them, but I'm having trouble finding it on the new site.  It's very simple, though.

 

The donuts are a chocolate cake batter baked in Norpro Donut Pans.  I used Cherrybrook Kitchen's gluten free cake mix, and substituted applesauce for oil (equal amount) and baked according to pan directions.

 

The coating is 1 bag Enjoy LIfe Chocolate Chips, 1 cup So Delicious vanilla coconut milk, and 1/8 tsp peppermint oil.  Melt the chips into the milk/oil and add the peppermint oil, and dunk the donuts.

 

If you're not avoiding milk, you can use heavy cream instead of the coconut milk to make the coating.

 

Once you have donut pans, the sky's the limit.  Just about any cake or quickbread batter works with them.  Next time I make banana bread, I think I will make donuts, and then coat them with the chocolate glaze (I'll skip the mint oil).
