That particular cake was "Kevin's Strawberry Layer Cake" from Linda Coss' cookbook " What's to Eat?: The Milk-Free, Egg-Free, Nut-Free Food Allergy Cookbook ". I've also done similar layer cakes using this egg & dairy-free "wacky cake" recipe . The frosting was based on this one but I used half Earth Balance buttery sticks and half Spectrum shortening.
