Many KFA members love the convenience of a slow cooker (crockpot), especially on days when the family’s activities will keep everyone busy in the hour before dinner time. With a slow cooker you can do all of the prep work earlier in the day (or even the day before!), turn the slow cooker on as you’re leaving the house, and have dinner waiting for you when you get home.


This amazing Crockpot Lasagna is sure to be a hit. It’s a versatile recipe that eliminates three of the common allergens that are usually found in lasagna: wheat/gluten, dairy and egg. It can be made without the spinach or meat, and also works well with regular lasagna noodles for those who do not need to use the wheat/gluten-free versions.


And believe it or not, it’s even better reheated the next day!




Dairy-Free, Gluten-Free Crockpot Lasagna




3 28 oz cans diced tomatoes

3 cloves pressed garlic

2 Tbsp dried oregano

1/2 tsp salt

1/4 tsp red pepper flakes (optional)

1/4 tsp black pepper

1/2 tsp dried basil

1 15- oz pkg firm tofu

2 cups Daiya shredded dairy-free mozzarella cheese

1/4 cup dairy-free grated Parmesan

1 pkg gluten-free lasagna noodles

6 cups fresh baby spinach (optional)

1 lb ground beef with 1/2 onion, cooked (optional)





In a bowl, combine tomatoes, garlic, oregano, salt, red pepper flakes, black pepper and basil. In another bowl, mix tofu with Daiya dairy-free mozzarella cheese and dairy-free Parmesan.

Spread a thin layer of sauce on the bottom of a 5 to 6 quart slow cooker. Top with 3 noodles, breaking the noodles to fit as necessary. Spread 1 cup of the sauce over the noodles, top with cooked meat followed by spinach and 1/2 of the cheese mixture. Repeat layers until crockpot is full, ending the layers with noodles, sauce and then sprinkle with mozzarella cheese.


Cook on low for about 3 1/2 hours or until the lasagna is cooked all the way through.




You can easily make this without the spinach or without the meat if you prefer. The amount of the layers don't really matter as long as you fill  them with what you like in them!

This could be made with  regular wheat based lasagna noodles if you do not need to avoid wheat/gluten.
