With the end of summer approaching, this is a refreshing treat for mom & dad and other caregivers — sharing with the kids is optional (if it is safe for them)!

Piña Colada
Ingredients
20-ounce can crushed pineapple, undrained
1 cup brown sugar
14-ounce can coconut milk
spiced rum (to taste)
Chill pineapple and coconut milk. Put all ingredients in an ice cream maker and follow manufacturer's instructions.
This will make too much to freeze all at once, so you'll have to suffer and eat the excess as it grows out of the middle. (Poor you!)
Note: Too much rum/alcohol will cause the ice cream to not freeze properly. Do not use more than a couple tablespoons.
