Wow! I am very excited to try this out! I am more interested it trying it out as an egg replacer in things like brownies (which are difficult to make without eggs) than as actual scrambled eggs. I am pretty sure Eli would not touch anything that looked like an egg! I noticed that Amazon is not selling it yet but did find it at Vegan Essentials : https://store.veganessentials....our-heart-p4615.aspx They are sold out but are getting more in soon.

How do I use it? To use VeganEgg, follow the instructions on the package to mix the powder with ice cold water. For example, here are the directions for using VeganEgg to make a scramble: Whisk or blend 2 level tablespoons of VeganEgg per ½ cup of ice cold water until smooth. Heat a lightly-oiled skillet to medium-high. Pour the mixture into the skillet. The "egg" should sizzle in pan. IMMEDIATELY begin to scramble. I would opt for flax meal instead of flax seeds just to make sure that they soak in the liquid and mix through without an errant seed remaining "crunchy". Flax and chia are very similar and both can be used to make "goo" to replace eggs.

I have tried to make my own sunflower seed butter in my food processor, but even after a looong time in the processor and a fair amount of canola, I still get a "paste" so thick you can slice it! What am I doing wrong? Do I just need a better processor? We haven't retried pumpkin seeds yet - she got hives from it about a year ago when we first tried it. I'll probably wait until pumpkins start showing up in stores so I can get truly uncontaminated seeds. Thanks!

I haven't made my own but we buy Sunbutter. I find it is quite thick and has a drier, more grainy consistency than peanut butter.
