Monday

Chicken salad in a pita: Chef Luca's Lunch Box Chicken Salad is a great option that uses vegan mayonnaise and leftover chicken. Can't use pita? Pack a container of chicken salad and tortilla chips for scooping it all up. No vegan mayonnaise options? Try this lettuce-wrapped Chicken Unsalad Sandwich that packs all of the chicken salad goodness inside the chicken. And it’s free of the other most common allergens, like milk, soy, wheat, gluten, peanut, tree nut, sesame, fish, and shellfish.

Pack with a cheese stick, grapes, fruit leather and milk or milk alternative.
