Monday: Chicken salad in a pita - Chef Luca's Lunch Box Chicken Salad is a great option that uses vegan mayo and leftover chicken.  Can't use pita?  Pack a container of chicken salad and tortilla chips for scooping it all up. No vegan mayo options? Try this lettuce wrapped Chicken Unsalad Sandwich that packs all of the chicken salad goodness inside the chicken!

Pack with a cheese stick, grapes, fruit leather and milk or milk alternative

Tuesday: Pasta salad - pasta salad doesn't have to have mayo.  BLT Pasta Salad is a whole meal with lots of flavor in every bite.  Pack the lettuce and croutons separately to keep them from getting soggy. Mix it all together just before eating.

Pack with carrot sticks, cinnamon and sugar apple slices and milk or milk alternative

Wednesday: Quesadilla with salsa or guacamole - toast up a tortilla with your favorite cheese.  You can add diced chicken or other meat.  Allow quesadilla to cool before cutting in quarters and packing.

We really don't do sandwiches here at all...

My son was loving homemade bread with sunbutter and jelly, but he hit his limits I guess.   At least we just have one more month of school.
