Chef Luca's Gazpacho Soup Recipe

Every summer, when the Texas heat makes us look for something refreshing, I like to prepare a classic Spanish dish that I learned during the years I lived in the Canary Islands: Gazpacho! Gazpacho is an amazingly refreshing cold soup. The classic recipe calls for tomatoes, cucumber, bread and condiments.
My version of Gazpacho is a little sweeter because I use watermelon instead of cucumber (members of the same plant family) and I don’t use any bread. It’s really important to have the tomatoes peeled and without seeds, and a seedless watermelon. It’s sweet and a little salty; very refreshing on the palate. It’s smooth and nutritious - your new summer favorite!
Enjoy it in a soup bowl or for the adults serve it over ice with a shot of vodka as a delicious summer drink.
Ingredients:
4 medium large vine tomatoes, peeled and seedless
2 1/2 cups of cubed seedless watermelon
3 peeled cloves of garlic
2/3 Tbsp of salt
1 tsp black pepper
3 Tbsp extra virgin olive oil
Method:
- Take 4 vine tomatoes and with a small knife cut a little cross on the bottom.
Put the tomatoes in boiling water for 20 seconds.
- Remove from the boiling water and place the tomatoes in an ice bath for a couple of minutes.
- Peel the tomatoes, cut them in quarters and cut seeds out.
- Combine all ingredients and blend in a blender.
Serve in a soup bowl with some fresh basil and a little olive oil.
- Or serve to adults as a refreshing drink.
