I actually used a box mix for the cake - I like Orgran's gf vanilla but sub out the egg with 1/2 c pear sauce or applesauce plus 1/2 tsp baking powder. The orange buttercream is 1 stick of butter/margarine plus 1 pound of powdered sugar, 1 tsp vanilla, and about 4 tbsp of orange juice - adjust the liquid for a soft frosting. I was very skeptical of Mexican and Italian restaurants in the beginning. The idea that there was so much cheese in the kitchen made me very nervous. However, I was surprised to learn that many Mexican restaurants don't use much in the way of milk or butter... just lots of cheese. For DS we are almost always able to get him white rice and beans (black or refried - hold the cheese). Occasionally we get him meat, too, but honestly he loves rice and beans so much he prefers them over the meat.
Great tip on the column and plates! I have some, but I've never used them. And being off 30 deg would have bugged me too! LOL! I've done stacked cakes and put tons of supports in. I use the jumbo straws, and I've found those are generally strong enough for 2 layers.
Egg & dairy-free cake = wacky cake (super easy to make!). Thanks! The "fancy" swirls are super easy to do and always has a big wow factor. It's 2 different frosting colors in the same pastry bag (colors "on top of each other" with the bag lying on the counter) then a big swirl with a large star tip.
I used the non-decorartive end of a cake tip and cut a curved edge out of a candy melt so that it fits nicely on the cake ball. Chocoley.com has GREAT candy melts that are free of peanut, tree nut, egg and more. I need to adjust the title. These are NOT dairy free. Sorry for the misinformation. The cake inside is dairy free, but the chocolate it is dipped in is not. Has anyone found dairy free candy melts that are also nut free?
