I actually made this the day you posted it. We made a single 8" pan. It was loved by everyone. Unfortunately, someone deleted the photo, although no one has yet copped to doing it.
Ugh on the deleted photo! Hope you guys enjoyed it. I made this several times while testing the recipe...and my boys were annoyed each time when I had to fend them off to get pics before letting them eat it!
Could gelatin replace xanthan gum? I'd be making other substitutions and DS has never had a "real "cookie. , so if it was a little off from the original consistency, it's OK.
I would give it a try...or I might even omit it. I made muffins with a similar flour combo the other night and it wasn't until later that I realized I didn't put in the xanthan. For example; After a kiss on the cheek by someone who just ate a PBJ, my child had a face full of hives and swollen lips. After sitting next to a child eating peanuts, she had hives all over her body, and a runny...
Hello and thank you for attending our webinar and for your comments. We have another school-focused webinar tomorrow - this time a panel discussion with two allergists and 4 school nurses. I will forward your question to them for a response.
